Warm tomato, avocado & egg

This is a great low carb option breakfast or as a snack.


  • 1 egg
  • 1 large tomato, sliced in to thick pieces
  • 1 avocado sliced
  • 2 tablespoons of avocado oil (or oil of your choice)
  • salt & pepper to taste

Now let’s cook

I make this in one large frying pan (for less clean up)

Heat oil in a pan on a medium heat, once the oil is hot carefully place the sliced tomato and sliced avocado to the pan, cook the tomato and avocado on one side for 2 – 3 minutes, carefully turn over the tomato and avocado add your egg, cover and cook for another 2 – 3 minutes.

Plating up

Take the tomato out place on a plate, then lay on the avocado, top with the egg (when the egg is cooked to your liking) season with salt and pepper. Enjoy!

Tip; add a drizzle of hot sauce over.
