This is a great way to make use of left over mac ‘n’ cheese.
Ingredients
- 3 cups of left over mac ‘n’ cheese which has been refrigerated (it needs to be really cold)
- 2 eggs
- 1/4 of a cup of oil for frying
I use a donut baking pan sprayed with non stick oil (if you don’t have a donut pan you can make donut holes instead)

Making the Donuts
Place the cold mac ‘n’ cheese in a bowl and blend using a hand blender, adding one egg at a time, continue to blend for around 2 minutes.
Place the blended mac ‘n’ cheese into a donut pan, and use a spatula or the back of a spoon to push the mixture down to ensure that the donut hole part of the pan is not covered.
Bake in a preheated oven at 350F for around 20 minutes.
Remove carefully from the oven, and allow to cool for 4 to 5 minutes.
Put the 1/4 cup of oil in a pan, and set the heat to medium.
When the oil is hot, carefully place the donuts in the pan, and fry each side for 3-4 minutes until golden brown.
Using tongs, remove the donuts from the pan, and place on kitchen towel to remove excess oil before serving.
Tip: Sprinkle with dried parmesan to replicate the sprinkles on a donut, and serve with a cheese sauce dip.
