Dates wrapped in Bacon Salad

I love this dish for a sweet savory snack. I used goats cheese as it pairs well with honey and dates. You can use feta, brie or your favorite cheese. This recipe is for 1


  • 3 cups of mixed salad (washed)
  • 5 dates pitted
  • 3 slice of bacon
  • 1 tablespoon of honey
  •  4 sun dried tomatoes chopped  (optional can use fresh)
  • 1 tablespoon of balsamic glaze (optional) 
  • 1/4 cup of goats cheese (or whatever cheese you choose)

Now let’s cook

Preparing the dates

Pre heat oven to 350F.

Cut each piece of bacon in half (giving you 6 pieces) wrap the 5 dates in the bacon, lay the extra piece of bacon along with the dates wrapped in bacon on a baking sheet, cook at 400F for 10 – 15  minutes until bacon is cooked.

Plating up

Place the washed salad on to a plate, add the sun dried tomatoes, cheese and drizzle the balsamic glace over.

Place the 5 bacon covered dates down the center of the salad, chop the extra piece of bacon (if you haven’t eaten it already ; )  sprinkle the chopped bacon over the salad. finally drizzle the honey over the dates. 

Tip; Thess dates are also great to use as canapes, (can be eating hot or cold) insert a cocktail stick and you have a tasty treat for your guests.
