Salad Topped with Quail Eggs

This is a quick delicious salad dish for one, that can be easily adapted for the whole family.


Ingredients

  • Arugula salad
  • 3 Quail eggs
  • 1/2 a cup of washed chopped Mushrooms (your favorite kind)
  • A few pieces of brie or goats cheese 
  • 2 slices of prosciutto (chopped)
  • 1 tablespoon of butter
  • 1 tablespoon of olive oil
  • Salt & pepper to taste
  • 1 tablespoon of honey

For the Dressing

  • 2 tablespoons of Olive oil
  • 1 tablespoon of balsamic vinegar
  • 1 tablespoon of lemon juice
  • Salt and pepper to taste

Now Let’s Cook

Add the butter to a pan and heat until melted, then add the mushrooms and saute for 3-4 minutes. Add the prosciutto and saute until crispy.

In a separate pan, add the oil and fry the quail eggs until cooked. Remember that as Quails’ eggs are small, they tend to be quite delicate.


Plating Up

Place your washed arugula on a plate, put all the dressing ingredients into a mason jar and shake for 30 seconds, or whisk in a bowl until everything is mixed.

Drizzle the dressing over the arugula, and place the cooked mushrooms and prosciutto on top of the salad.

Place the fried quail eggs on top, add the cheese, then drizzle the honey over the cheese.
